A Dimsum Story

How to make heaven at home.

If there was a heaven, it would have dimsum in it. Lots of it. We got the inside scoop from Chop Chop, Pune on their two most popular plates of cloud nine. Read on for the recipes.

Prawn Sui Mai

Ingredients:

Prawn 500 gram
1 Spring Onion finely chopped
5 Garlic Clove, juiced
1 (10-cm) piece fresh ginger, juiced
Sesame Oil 7 tsp
Oyster Sauce 9 tsp
Chicken Broth powder 3tsp
Veg Broth Powder 3tsp

Method:

  1. Put all the ingredients in a food processor until partly smooth but not pureed. It should have a little texture. Season with salt and pepper.
  2. Assemble the dumplings by holding a wonton wrapper in your hand, then drop 1 tablespoon of the filling onto the centre of a wrapper.
  3. Gather the edges of the wrapper up around the filling leaving the top exposed. Tap the dumpling on the table so the bottom is flat and it stands upright.

  4. Put the assembled dumplings in a steamer for about 5 minutes. Serve hot.

Minced Veg & Water Chestnut Dumpling

Ingredients:

Flour 500g
Baby Corn 100g, finely chopped
Cabbage 80g, finely chopped
Water Chestnut 100g, finely chopped
Cauliflower 80g, finely chopped
Carrot 50g, finely chopped
Beans 80g, finely chopped
Chilli Paste 6tsp
Veg Broth Powder 4tsp
Sesame Oil 4tsp



Method:

  1. Start by making the dough for the dumpling wrappers. Put the flour in a large mixing bowl. Gradually add the water to the flour and knead into smooth dough. This process should take about 10 minutes. Cover with a damp cloth and let the dough rest for an hour.
  2. In the meantime, boil all the vegetables together for about 2 minutes, drain all the vegetables and toss it on a wok add some oil along with the other ingredients and stir fry for about 5 minutes. Season with salt and pepper. Transfer the vegetable mixture to a large mixing bowl and allow to cool.
  3. To assemble the dumplings, cut the dough into small tablespoon-sized pieces. Use a rolling pin to roll each out into a circle, and pleat the dumplings, continue assembling until you’ve run out of filling.
  4. Put the assembled dumplings in a steamer for about 5 minutes. Serve hot.
